I have been a full-time professor at Palm Beach College since 2010 and have been working in the field of nutrition, nutrition communications and dietetics for the past 35 years. Before coming to PBSC, I lived in Boston, Massachusetts and was a professor first at Boston University where I taught nutrition undergraduates and graduate students and co-directed a graduate program in Nutrition communications and later at Simmons College teaching food science. I have a doctorate (PhD) in nutritional sciences from Tufts University and am a Registered Dietitian (RDN). I just received an MFA (Masters in Fine Arts) in creative writing (non-fiction). I also hold a Master’s degree (M.S.) in Nutrition communications, a B.S. in clinical dietetics and nutrition and a B.A. in Comparative Literature.
In addition to teaching at universities and colleges, I have worked in all different areas of nutrition and dietetics---I owned and operated my own baking and catering company, worked with inpatient and outpatient dietetics, nutrition education and with the Academy of Nutrition and Dietetics. I’m also a researcher and writer and have authored textbooks, research papers, book chapters and an award-winning cookbook and nutrition guide, The Romantic Vegetarian. Most recently, during my sabbatical, I was a Visiting Professor at Harvard Medical school and did research in substance use disorder recovery and nutrition.
I swim and compete with a Masters swim team, bicycle and do yoga and am at home in the ocean.
I love teaching and am happy and honored to be a full-time professor at Palm Beach State College.
